Apple and almond? Perfect! These sweet sandwiches make a great companion for your coffee or tea.
Combine all the ingredients for the dough and knead for 20 minutes with a bread machine or by hand (or knead for 10 minutes with a kneading machine). Cover the dough with cling film and leave to rise for 20 minutes.
Peel, halve and core the apples. Cut each half into small wedges. Mix the apples with the almond powder and (if using) some drops of almond liqueur.
After resting, punch the dough down and cut it into chunks of 100 g. Mix each chunk with some filling, shape them into balls and place them in muffin/cupcake cups. Cover the cups with cling film and leave to rise for 45 minutes.
Pre-heat the oven at 200 °C.
Whisk the egg and brush a little on each bun. Sprinkle them with almond flakes.
Bake the buns for 20 – 25 minutes at 200 °C. Decorate with some powdered sugar.
